What Just Opened in Bend: A Local's Map to the 2026 Food and Drink Wave

When 900 Wall closed last May after seventeen years on the corner of NW Wall and NW Minnesota, it felt like downtown Bend had lost a room from its own house. A year later, that same corner is set to reopen as The Hudson, a live-fire chophouse from chef George Morris, and it turns out 900 Wall's absence was the leading edge of the biggest turnover Bend's dining scene has seen in a decade.

Here's the thing worth noticing. The nine or so concepts arriving in 2026 aren't scattered evenly across town. They're clustering into three specific corridors, and if you already live here, those corridors are about to redraw the map of where you eat, meet a friend for coffee, or take out-of-town guests on a Saturday afternoon.

The Jackstraw Block Is Bend's New Center of Gravity

The most concentrated activity is happening on a single 4.7-acre parcel on SW Industrial Way, halfway between downtown and the Old Mill District. In mid-July 2026, Bend Brewing Co. and Sisters Smoke & Meathouse opened The Way West, a 3,800-square-foot bar, restaurant, and meat market on the first floor of the Jackstraw development at 310 SW Industrial Way. It's Bend Brewing's third location alongside its downtown flagship and the Waypoint brewery, and it's the first Bend outpost for Sisters Smoke & Meathouse, which already runs shops in Sisters and Redmond.

Next door, Sisters Coffee Company opened their newest location in April. That gives one building a butcher counter, a brewery-run kitchen, and a serious coffee bar within a hundred feet of each other, in a stretch of Industrial Way that until recently was known mainly for the Box Factory and a scattering of light-industrial tenants.

Kay Johnson of Sisters Smoke & Meathouse framed the collaboration in plain terms: "It brings together two kinds of iconic companies from the Central Oregon area." Read that as a signal about where Central Oregon operators now think the walkable center of Bend actually sits. Not Wall Street. Not the Old Mill roundabout. The seam between them.

Downtown Wall Street Gets a Full Reset

Downtown isn't ceding ground quietly. Three of the year's most-watched openings are within a five-minute walk of each other along Wall and Bond.

The Hudson. The successor to 900 Wall is a live-fire chophouse led by chef George Morris, with a grand opening approaching. Morris left his role as chef and part owner of Sixtop Restaurant Group in late 2024, a group that included Bos Taurus, Nome Italiano, Miyagi Ramen and Habla. The second floor of The Hudson will operate as a private members lounge offering privacy and flexibility on reservations to its membership, which is a format Bend has essentially never had at this scale.

Bamboo Sushi. If construction stays on track, the Bend location will open in early March at 125 NW Oregon Ave, marking a new outpost for the sustainable sushi restaurant. The chain also has locations in Portland, Seattle, the Bay Area and Denver.

Olive and May. The Drake in downtown Bend is no longer, and new owners plan to reopen the space under the name Olive and May, with northern Mediterranean food influenced by Spain, Italy, France and Greece, from co-owner Peter Kost, who also owns Ken's Artisan Pizza. The restaurant is named for two women in Bend's history, including Olive McKay, who arrived around 1900 with her husband Clyde, who built the existing building in 1947.

Three restaurants, three formats, three different bets on what downtown dinner looks like in 2026. Members lounge. Sustainable sushi. Northern Mediterranean in a building older than most of Bend's residents. If you've been telling yourself downtown was static, this is the year to revise that view.

The West Side Quietly Builds a Breakfast-and-Sweets Row

Century Drive has been the resident story hiding behind the downtown headlines. Look at what's landing on a two-mile stretch heading toward Mt. Bachelor:

A second location of Haven Bagels and Coffee will open between the Oregon State University-Cascades campus and Terava Apartments on Century Drive. The bagel shop opened its first brick-and-mortar in August 2024 in Bend's Reed South development and is known for bagels made with clean, organic ingredients, espresso drinks and gluten-free options.

The owners of Powder House Bend are building a two-story taphouse and food cart lot behind their building off SW Century Drive, with room for as many as 10 trucks and space for events and games.

On Galveston, a family-owned donut shop called Powder Hound Doughnuts, run by husband and wife Matthew "Match" and Whitney Elliott, is targeting a March opening in the building formerly home to Bo's. Match Elliott put the intent bluntly: "It's an opportunity for us to start something for ourselves and provide something back to the community."

Add Casa Sur, which opened in early May at 335 SW Century Dr, and the west side has gained a coffee-and-carbs backbone in a corridor that a few years ago was mostly gear shops and gas stations.

East Side, Old Mill, and the Outliers

The east side finally gets a full-service anchor in the former Kayo's and Phoenix space. Mountain View Roadhouse is currently hiring for its restaurant in the former location of The Phoenix, owned by the Traxler Group, which also owns Sisters' The Gallery Restaurant and Bar and Eugene's Chambers Grill and Taphouse.

At Old Mill, the deli concept locals have been waiting on is Stacks Dinner & Delicatessen at 545 SW Powerhouse Dr, with NYC-style deli fare, in-house cured and smoked meats, and pastrami sandwiches from the team behind Zydeco Kitchen & Cocktails and chef Eric Joppie.

And for the neighborhoods that never get talked about: Cuppa Yo, the frozen yogurt franchise founded in Bend in 2010, is opening a third city location that will share a parking lot with Costco, in celebration of its 15th anniversary.

The Pattern Under the Openings

Two things stand out when you set these side by side.

First, local operators are expanding, not new-to-market chains. Bend Brewing, Sisters Smoke & Meathouse, Sisters Coffee Company, Zydeco, Ken's Artisan Pizza, Powder House, Haven Bagels, and Cuppa Yo are all Central Oregon names planting flags in new corners of town. The Way West is the third location for Bend Brewing Co., the city's second-oldest brewery, alongside its landmark downtown location and its Waypoint brewery. That kind of within-market compounding is what a maturing food scene looks like.

Second, the geography of "going out" is decentralizing. For years, downtown was the answer to "where should we meet?" In 2026, a reasonable answer is Jackstraw, or Century Drive, or the stretch of Powerhouse behind Old Mill, and locals will start choosing based on which corridor they can walk from home. That's a real shift, and it's the kind of shift that tends to precede changes in where people want to live within Bend, not the other way around.

There's a Friday-night walk between Bend Brewing's original and its Jackstraw sibling. And there's an entire downtown block, the Wall-Oregon corner, that's about to feel different than it has since before the pandemic.
